Southern Jewish Princess Cranberry Jasmine Meatballs
These jewels will make you a very popular princess. Serve as an appetizer or as an entree over jasmine rice with a side of snap peas. I have this recipe listed first for a reason, people!

Mix together lightly:
1 ¼ cup cooked jasmine rice (cooled to room temp)
2 lbs ground beef, I think Whole Foods ground beef tastes best
2 eggs
1/4 c catsup
2-3 Tbsp dried onion flakes
1 Tbsp soy sauce
2 Tsp Worcestershire sauce
Grated garlic clove or a little garlic powder
Black pepper to taste

For sauce mix:
12 oz bottle Heinz Chili Sauce
16 oz can jellied cranberry sauce
2 Tbsp lemon juice

Roll meat mixture into small (1.5 in.) balls and add to baking dish. Cover with sauce and cook uncovered 40-50 minutes at 400 degrees.

 

Horseradish Grill Chocolate Cake

sift these together:
2 Cups of sugar
1 1/2 Cups of all-purpose flour
1/2 tsp. salt
3/4 tsp. baking soda

combine to melt chocolate completely and set aside:
4 oz unsweet chocolate (chopped)
1 cup double strong coffee

mix well:
1/2 cup vegetable oil
2 eggs
1 1/2 tsp. vanilla extract
1/2-cup sour cream
Combine chocolate mixture with vegetable oil mixture, working in thirds, add flour mixture until smooth. Add to 2 buttered and floured 9 inch round cake pans. Bake at 325 degrees for one hour.

Horseradish Grill Chocolate Frosting

melt until smooth:
1/4 pound butter
1 pound semi sweet chocolate

mix together:
1 cup heavy cream
1/3 cup sugar
1/4 tsp. salt
1 tsp. vanilla extract
1/4-cup double strong coffee

Add chocolate to cream mixture. Mix well. Allow to set at room temperature for 2 to 3 hours or overnight.

 

SJP’s PBL (Peanut butter, Bacon, and Lettuce) Sandwich
Just try it. You can thank me later.

2 slices of your favorite multigrain bread, I like toasted
A few really thin rings of yellow onion
Mayo
Peanut butter, crunchy or smooth
Shredded lettuce

2-3 slices bacon cooked crispy. I like to cook bacon in the oven instead of frying.
To one slice of bread/toast add a very thin layer of mayo. Add a liberal amount of peanut butter to the other slice. On the PB slice, arrange bacon slices, onion rings, and lettuce. Top with the mayo slice of bread. Voila!

 

FANTASTIC ARTICHOKE DIP
This one is all over the web. I’ve served it 20 times if I’ve served it once. I present with blue corn tortilla chips instead of the pita triangles.

8 oz Cream cheese
12 oz Shredded mozzarella
1 c Mayonnaise
1 c Grated parmesan
1 Onion finely chopped
2 Cloves Garlic; finely chopped
2 Jars Marinated artichoke hearts
3 Pita bread

Drain artichokes well and tear them apart with your fingers.
Cut up pita bread into chip size triangles, separate and bake on a cookie sheet until crispy (approx 5 minutes).
Combine all other ingredients and mash.
Bake in an uncovered casserole dish for approx 30 minutes @ 350 or until bubbly.
Serve hot out of the oven and scoop up dip with pita bread.
